Descriptions of Breads

   
Sourdough
Our artisan sourdough is one of our signature breads. We began the starter in 1985 and have been using it since. Our sourdough is made using an. Old World style; we use a long, slow, cool fermentation process of 36 hours. The result of this painstaking process is a smooth chewy sourdough with a crisp caramel colored crust. We make this into baguettes as well as loaves.
   
Compagnon
We made up this bread using a whole wheat sour starter originating also in 1985. We mix the dough using white and whole wheat flour. The result is a rich, nutty sourdough bread perfect for sandwiches and dinner bread.
   
Francese
Truly our most popular bread. This is a Ciabatta style loaf made with levain and extra virgin olive oil. We make this dough into long loaves and rolls. The rolls are perfect for sandwiches. We make the lion's share of our café sandwiches on these rolls.
   
Potato Loaf
A soft smooth bread made with whole boiled potatoes. This is perfect toasting or sandwich bread. We make this in a pan shape loaf.
   
Whole Wheat Millet
A traditional whole wheat sandwich bread with the added zing of millet. This makes excellent sandwiches. We also make rolls out of this dough.
   
Four Seed Compagnon
The same Compagnon dough mixed with poppy seeds, pumpkin seeds, sesame seeds, and sunflower seeds. The loaf is oblong and is rolled in seeds before it is bakes, so it is crispy with a seed crust.
   
Foccacia
Soft white bread studded with rosemary and baked with a splash of extra virgin olive oil and a sprinkling of salt.
   
Sweet French
Traditional sweet baguette. Chewy soft interior with crusty exterior. This dough is also made into oblong loaves.
   
Pain Tobin
A chewy whole wheat sourdough. This is a German style bread, dense and rich.
   
Sour Cheddar
Our white sourdough studded with sharp New York style cheddar cheese. This loaf is dusted with cornmeal before baking.
   
Jalapeno Cheddar
Our Francese bread mixed with sharp New York cheddar cheese and spicy jalapenos. This loaf is extremely popular, and excellent sandwich loaf.
   
Parkerhouse
Soft pull-apart dinner rolls.
